Gregg Brickman
Executive Chef

Gregg Brickman is a Corporate Executive Chef and culinary leader with a successful track record of contributing to revenue/profit growth through improvements in quality, productivity, operational efficiency, and customer service. He is an exceptional director of fine dining, casual dining, operations, high volume catering, and team building, and is skilled in developing dynamic systems for multiple centers including R&D, process optimization, and data analysis. Currently serving as Corporate Executive Chef/Manager of Culinary Services at Henny Penny, Gregg has over 20 years of experience in the industry, including roles as Sr. Director of Culinary Innovation/Executive Chef at HOA Restaurant Group, LLC, East Coast Regional Executive Chef at Wolfgang Puck Catering, and Executive Sous Chef at The Ritz-Carlton, Buckhead. He holds a BA degree in Hotel Restaurant Marketing and an AA degree Culinary Arts from Johnson & Wales University and is a member of the American Culinary Federation.

Rebecca Brickman
MS, RDN, LD

Rebecca Brickman is a Registered/Licensed Dietitian with Master in Food Technology.

As a Clinical Nutrition Coordinator at Northside Hospital in Lawrenceville, Georgia, I have 17 years of experience in the field of nutrition. I currently lead a team of clinical dietitians in providing evidence-based medical nutrition therapy to enhance patient care. In addition to managing resources and labor to improve processes and adhere to regulatory codes and standards, I also have experience as a Clinical Registered Dietitian, assessing and monitoring the nutritional status of patients, including those receiving enteral and parenteral nutrition. I have also worked as a Nutrition Manager, leading a diverse food service team to ensure quality in food production, patient service, and the retail café, and adhering to OSHA, HACCP, local health and safety codes, and JCAHO standards. In the past, I have also worked as a Clinical Nutrition Manager, Travel Dietitian, Sports Nutrition Practice owner, and Nutrition Education Specialist. I hold a Master’s degree in Food Technology from The University of Georgia and a Bachelor’s degree in Nutritional Sciences from the University of New Hampshire. I am also a NSCA-CSCS (National Strength and Conditioning Association Certified Strength and Conditioning Specialist).
